At home, you are free to decide where and what to buy for cooking, you know what is on the table and what is not. But when you go out? Let's be honest. There are so many menus offering tasty dishes from different cuisines. But with most of them - unless they are organic restaurants like ours - you often don't know whether the steak comes naturally from the region or has been cloned and imported from high-tech farms. The eggs in the Kaiserschmarrn are actually free-range from the region or imported from laying batteries with genetically modified feed.
In fairnESSkultur we try to make the origin, sources of supply and supply chains transparent and thus contribute to compensating the additional costs fairly for both sides: for you as a guest, because you see that you are actually paying for what you can expect. And for the restaurateurs, because they can charge the prices they pay more for their organic produce, which at best even comes directly from the region. And from REAL partnerships. Unfortunately, there are also restaurateurs who claim to be sourcing partners, but only buy something from the producer once a year (e.g. a piece of beef), but whose roast origin is on the menu all year round, even though they have not bought that much from the sourcing partner. Or, on the other hand, perhaps more roast is carried out of the kitchen than the reference partner actually has in the barn throughout the year. To ensure that this does not happen and that you can rely on it, we only have partnerships in the fairnESSkultur that have been mutually confirmed and actually exist.
So everyone benefits. And of course also the organic producer who supplies the host and thus also you as a guest. That tastes better and secures livelihoods. Win-win for everyone!
